A Canadian Classic Given a Nutty Boost
Taking advantage of BC Hazelnuts for a slightly different take on the classic Nanaimo bar recipe.
Ingredients
For the base layer
½ cup butter
¼ cup sugar
¼ cup cocoa
1 egg
1 tsp vanilla
2 cups graham cracker crumbs
1 cup ground roasted hazelnuts, plus extra for topping
For the custard layer:
¼ cup butter
1 ¼ cups icing sugar
2 tbsp custard powder
Splash of milk as needed
For the top layer:
4oz good quality chocolate
1 tbsp butter

Method
To make the base layer:
- Melt butter.
- Add sugar, cocoa, beaten egg, and vanilla.
- Mix in graham cracker crumbs and ground hazelnuts.
- Press into an 8×8 pan.
To make the custard layer:
- Mix icing sugar and custard powder.
- Melt butter and add to icing sugar mix, blending with a splash of milk to produce a smooth consistency.
- Spread over base layer in the pan.
To finish:
- Melt the top layer ingredients together.
- Spread over the top of the custard layer, in the pan.
- Sprinkle extra chopped hazelnuts on top.
- Refrigerate until set.
- Cut the slice into individual bars and enjoy!
