A Canadian Classic Given a Nutty Boost

Taking advantage of BC Hazelnuts for a slightly different take on the classic Nanaimo bar recipe.

Ingredients

For the base layer

½ cup butter
¼ cup sugar
¼ cup cocoa
1 egg
1 tsp vanilla
2 cups graham cracker crumbs
1 cup ground roasted hazelnuts, plus extra for topping

For the custard layer:

¼ cup butter
1 ¼ cups icing sugar
2 tbsp custard powder
Splash of milk as needed

For the top layer:

4oz good quality chocolate
1 tbsp butter

Method

To make the base layer:

  1. Melt butter.
  2. Add sugar, cocoa, beaten egg, and vanilla.
  3. Mix in graham cracker crumbs and ground hazelnuts.
  4. Press into an 8×8 pan.

To make the custard layer:

  1. Mix icing sugar and custard powder.
  2. Melt butter and add to icing sugar mix, blending with a splash of milk to produce a smooth consistency.
  3. Spread over base layer in the pan.

To finish:

  1. Melt the top layer ingredients together.
  2. Spread over the top of the custard layer, in the pan.
  3. Sprinkle extra chopped hazelnuts on top.
  4. Refrigerate until set.
  5. Cut the slice into individual bars and enjoy!
